The other night I made a skillet dish and it was very popular in our house. So I made it again, only I changed everything. The first dish was sausage instead of bacon, a can of tomatoes instead of the pepper, heavy cream instead of sour cream, and monterey jack instead of cheddar.
1/2 lb bacon
1/2 onion
1 green pepper (or yellow, or red, or whatev)
3 c chicken broth
8 oz penne
1/2 c (or possibly 3/4 c) sour cream
1 c shredded cheddar

Cut the bacon into little pieces and fry it up in a big skillet. Add the chopped onion and green pepper and cook until pleased with the tenderness. Pour in the broth and pasta, bring to a simmer, put the lid on, and cook until pasta is done (About 15 min). Stir in sour cream and cheese.
Did you notice that I cooked everything in the bacon grease. Yes, I did. So the resulting cheesy sauce is also bacony sauce. I am not complaining. I am recording the recipe so I can have bacony sauce again.
